Menu Plan – June 13, 2010

I went to retrieve something from my freezer this weekend and had a realization -- I have an abundance of food in my freezer at the moment. Some bits and pieces of this and that; more chicken than I realized. And so, I’m going to try and use up a bunch of it in June.

Hopefully this will help reduce my grocery budget, so that I can spend it on berries and jam making instead! The temperatures are going to be highly variable this week. Monday they’re in the 90s and Tuesday & Wednesday they’re supposed to be in the high 70s. So, I’ve planned our meals accordingly. Nothing in the oven on the hot days. Tuesday, since the temperatures will be cooler, I’m planning a big Freezer Cooking Day – mostly breakfast items.

Here’s the plan for the week:

Sunday
B - Cereal & Pop Tarts
D - Hot Dogs, Mac & Cheese, watermelon

Monday
B - Pancakes & eggs (Hubby & the girl have a Daddy Daughter Date for Doughnuts)
D - Shredded Beef Tacos & Watermelon with Summer Fruit Dip

TuesdayChicken Stir Fry
B - Breakfast Burritos (a variation of this recipe)
D - Chicken Casserole

Wednesday
B - Cinnamon Rolls
D - Chicken Stir Fry

Thursday
B - Whole Wheat Banana Chip Muffins & Eggs
D - Leftovers

Friday
B - Cereal & Pop Tarts
D - Twice Baked Potatoes, Asian Spinach

Saturday
B - Fruity Burritos (these are fantastic on hot summer days)
D - ?? Possibly attending a party

Lunches this week will be sandwiches & smoothies – I love smoothies in the summer, especially Purple Lava.
Snacks will be sliced cucumbers, trail mix, Popcorn, and Rice Krispie treats.
