I've been out of the habit of menu planning for a while, but it's now time to get back into the swing of things. I need the structure to make my week go more smoothly. Since my freezer and pantry are bulging and can't really hold much more I'm trying to cook predominantly from what I already have on hand before making many more stock-up purchases. Eggs have been on sale a lot recently, so they'll figure into several meals.
Here's the plan for the week:
Sunday:
B - cereal
D - mac & cheese, hot dogs, cantaloupe
Monday:
B - waffles, leftover canned peaches
D - pork stir fry & stir fried rice
Tuesday:
B - whole wheat bagels, scrambled eggs
D - leftover pork stir fry
Wednesday:
B - banana muffins & fried eggs
D - Chicken Nuggets, Asian Spinach & Fried Apples
Thursday:
B - pancakes from the freezer, cantaloupe
D - "Noodle Thing" casserole & leftover veggies
Friday:
B - Baked banana oatmeal - modification of this recipe
D - Baked Soy Lemon Pork Chops,
Saturday:
B - Apple Raisin French Toast Casserole
D - Spinach and Bacon Frittata
