Menu Plan - December 7, 2009



Considering I didn't really have a plan last week, meals went pretty well. We had one disaster and one unexpected dinner at home because of snow (a bit odd to have 6 inches of snow in MD in early December, but I'll take it - it was a whole lot of fun!)

Hubby's schedule is a bit more normal this week, so I'm planning to do more cooking at home. We do have a bunch of leftovers to use up and my stockpile is sort of overflowing it's bounds so I'll be cooking from the freezer/stockpile a good bit this week.

Here's what's on the plan this week:

Sunday:
B - cereal
D - Dinner @ church for Christmas Dinner & Show

Monday
B - Banana Pancakes
D - Hamburgers, green beans, carrots

Tuesday
B - Oatmeal w/ various additions
D - Planning to try this recipe if I can find directions for Taquitos

Wednesday
B -Waffles

D - Parmesan Crusted Porkchops
or these that are on Organizing Junkie's plan this week.

Thursday
B - Whole Wheat Pumpkin Chocolate Chip Muffins (from freezer)
D - Chicken & Dumplings leftovers from Saturday (frozen in the meantime)

Friday
B - French Toast
D - Pizza (using this dough recipe and this sauce recipe) w/ ham & pineapple

Saturday
B -Cinnamon Rolls? Maybe. (If I keep putting them on the plan, maybe I'll finally get them made.)
D - Possibly going to a party, if not - Chicken Stir Fry

Side Dishes will include these from my freezer and stockpile:  salad, peaches, green beans, corn, mashed potatoes.

I am hoping to do some Cookie Baking this week as well. It kind of depends on how much I can get done declutter today, whether any of that will happen in the next day or two.

Anybody have directions for how to create Taquitos? These Southwest/Mexican recipes are all pretty new to me.

Taquitos are not that hard to assemble. You basically dip the corn tortilla in a hottish liquid to soften them up, put your filling in and roll them up. Then you can bake them on a cookie sheet in the oven. Once cool you can freeze them if you want them for the freezer. I know Allrecipes has a recipe if you need clearer directions. Good luck!
