Menu Plan - December 14, 2009


So it's 12 days till Christmas and 7 days till we have family coming in from 2000 miles away! The tree is decorated, the house is decorated, most of the gifts are bought. There's still cookies to bake, cards to write and gifts to wrap. There is a need to keep things simple.

So here's what's on the simple plan this week:

Sunday:
B - cereal
D - Spinach and Bacon Frittata (Yummy & super quick & easy, you should try this!)

Monday
B - Banana Pancakes (I should make ahead tonight, but the kitchen is clean and I refuse to mess it up again!)
D - Pizza Meatloaf (from the freezer), green beans, carrots

Tuesday
B - Whole Wheat Pumpkin Chocolate Chip Muffins & scrambled eggs
D - Shredded Beef Soft Tacos

Wednesday
B - Banana Baked Oatmeal (adjustment of this recipe)

D - Parmesan Crusted Porkchops(?)


Thursday
B - Waffles
D - Probably leftovers or a casserole of some kind.

Friday
B - Eggs in a Hole
D - Pizza (using this dough recipe and this sauce recipe) w/ ham & pineapple

Saturday
B - Cinnamon Rolls? Maybe. (Still hoping to finally get these made.)
D - TBD, something w/ shredded beef?

Side Dishes will include these from my freezer and stockpile:  salad, peaches, green beans, corn, mashed potatoes.

As I look over this plan for the week, I'm thinking there will probably be several adjustments. Wednesday will probably end up being a Crock-pot night, just so I don't have to think about dinner and homework all at the same time. It's a plan. It's not written in concrete, just jello.

I am much more hopeful about Cookie Baking this week since all the decorating is now finished. I'll post recipes as they are completed.

Anybody have directions for creating baked Taquitos? I think my family would really like them, but I'm a bit baffled on how to create them. These Southwest/Mexican recipes are pretty new to me.

I'm definitely trying the frittata. My hubby is not a fan of spinach. But, I bet the bacon will sway him :)

Honestly Amy, we couldn't taste the spinach. And, you could use less spinach and still have a really good frittata - my kids thought it tasted just like an omelet.
