Menu Plan - January 17, 2010

I am so glad to be back to menu planning. It really does make my week more productive and run more smoothly.

Last week we did quite well following the plan, with only a few variations. We had a few more leftovers than expected and a night out at Chick-fil-A, so a few things have been bumped to this week. I'm trying to improve the "healthy" factor at breakfast and incorporate more fruit into breakfast. We'll see how that goes over with the peanut gallery this week.

Here's the plan for this week:

Sunday:
B - cereal or Pop-tarts
D - Breakfast for Dinner (oranges, bacon, waffles)

Monday
B - Whole Wheat Banana Muffins, fried eggs
D - Spinach Bacon Frittata, cantaloupe

Tuesday
B - sausage biscuits, peaches
D - Shredded Beef BBQ Sandwiches, green beans, cantaloupe

Wednesday:
B - Waffles, peaches, ?protein
D - Still undecided. Hubby's not home. Looking for something quick/easy.

Thursday
B - Baked Oatmeal
D - Spaghetti (Hubby cooking.)

Friday: (Movie night at church)
B - bagels, scrambled eggs, peaches
D - Leftover Buffet

Saturday: (Friends for dinner)
B - Pancakes, fruit
D - Turkey, Scalloped potatoes, green beans, ??

I also have a butternut squash that I need to use. I think I'm going to try to make soup with it - maybe on Wednesday. If you have a recipe you think I should try, let me know in the comments.

Butternut squash soup sounds yummy ... as does the rest of your plan. I agree that menu planning helps to make the whole week go more smoothly!
